Roasted Sweet Potato, Broccoli Salad

Ingredients:

  • 3 heads of Brocolli

  • 1 tub of Spinach

  • 1 sweet potato, cubed

  • 2 chicken breasts

  • 1 container of feta, crumbled

  • Balsamic vinaigrette

Sliced strawberries and pineapple

Instructions:

Marinate chicken in balsamic vinaigrette.

Bake chicken at 375 for 30 minutes, or until done.

Mix sliced broccoli and sweet potato with garlic, olive oil, cajun pepper, salt, and pepper.

Roast on a baking sheet at 375 for 35 minutes, or until done.

Slice chicken, combine with sweet potatoes and broccoli.

Place mixture on top of the spinach.

Sprinkle feta.

Serve with balsamic vinaigrette.
