Autumnal Salad

Ingredients:

  • One can of beats

  • One can of garbanzo beans

  • Pumpkin seeds

  • Sweet potato, cubed

  • Crumbled feta

  • Spinach

  • Kale

Instructions:

Stir together pumpkin seeds, cubed sweet potato, and garbanzo beans with olive oil, balsamic vinaigrette, and garlic.

Spread mixture onto a cooking sheet and roast for 30 minutes at 400 degrees.

Create a bed of spinach and kale.

Spread pumpkin seeds, cubed sweet potato, and garbanzo beans on top of the spinach and kale.

Top with feta.

Serve with balsamic vinaigrette.
